Pork Chili Verde

  • Pork roast, cut in 1 “ cubes

  • Chicken, pork or vegetable broth

  • Onions

  • Salt

  • Sour Cream

  • Cilantro

  • Candied Jalapeños

  1. Cut pork into cubes and salt

  2. Add some lard (or choice of fat) to a dutch oven and heat. Brown pork pieces in small batches

  3. Add onions to the pan and cook until soft and brown. Return pork to the pan

  4. Add broth until the pork pieces are 3/4 covered

  5. Cover and simmer for a few hours, until pork can be shredded.

  6. Remove pork from pot with slotted spoon. Reduce the liquid in the pot by half.

  7. Shred pork and return to the pan with the reduced liquid. Stir to combine

  8. Serve over rice with sour cream, cilantro and candied jalapeños as garnishes.
